Margarita Man Margarita Pie

Prep time: 25 minutes     Set time: 2 hours

  • 2 cups miniature pretzel twists
  • 2 tablespoons sugar
  • 2 tablespoons butter or margarine, melted
  • 2 ounces of Margarita Man Blenderful, Margarita flavor (half bottle)
  • 1 quart (4 cups) vanilla ice cream slightly softened
  • 1 lime (for grated peel and juice)
  • 3 tablespoons tequila
  • 1 tablespoon orange-flavored liqueur

Heat oven to 375 degrees.

Pie Shell:

  • Grate to peel from the lime and put aside.
  • In food processor or blender process pretzels until crumbs form.  Add sugar, melted butter or margarine and pulse to mix.  Then with machine running, slowly add the juice from the lime processing until well mixed.
  • Place mixture in ungreased 9-inch pie pan and with back of spoon, press mixture firmly into bottom and sides of pan.
  • Bake at 375 degrees for 5-7 minutes or until set.  Place baked shell in refrigerator or freezer until ready to use.

Filling:

  • In clean food processor or large electric mixer bowl combine ice cream, Margarita Man mix, grated lime peel, tequila and liqueur and process or mix until blended.
  • Spoon into cooled pretzel shell and freeze 2 hours or until firm.
  • Serve with whipped cream and lime garnish if desired.
